Description

Chocolate-drizzled almond joy cookie bars blend coconut, almonds, and rich chocolate into a delightful dessert that celebrates classic candy bar flavors. Sweet layers of nostalgia melt together, promising you a blissful bite of pure indulgence.

Ingredients

Scale

Main Ingredients:

  • 1 1/2 cups (360 ml) all-purpose flour
  • 1 large egg
  • 1 cup (240 ml) chocolate chips
  • 1/2 cup (120 ml) flaked coconut
  • 1/2 cup (120 ml) almond slivers

Sugars and Fat:

  • 1/2 cup (120 ml) butter, softened
  • 1/2 cup (120 ml) granulated sugar
  • 1/2 cup (120 ml) light brown sugar, packed

Leavening and Seasoning:

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the baking workspace by lining a 9×9″ dish with parchment paper and heating the oven to 350°F.
  2. Sift together flour, baking soda, baking powder, and salt in a medium mixing bowl.
  3. Using an electric mixer, cream softened butter with brown and granulated sugars until light and fluffy.
  4. Incorporate egg and vanilla extract into the butter mixture, blending until smooth.
  5. Gently fold dry ingredients into the wet mixture, stirring just until combined to avoid overmixing.
  6. Fold in chocolate chips, half of the coconut flakes, and half of the almond slivers.
  7. Transfer the cookie batter into the prepared pan, spreading evenly with a spatula. Garnish the top with remaining chocolate chips, coconut flakes, and almond slivers.
  8. Bake for 20-22 minutes until edges turn golden and center is set, keeping in mind the bars will continue to firm up after removing from the oven.
  9. Allow the bars to cool completely in the pan before lifting out the parchment and slicing into 12-16 rectangular pieces.

Notes

  • Soften butter completely at room temperature for smooth, even mixing that prevents lumpy texture.
  • Avoid overmixing the dough to keep cookies tender and prevent tough, dense bars.
  • Toast almonds and coconut briefly before adding to enhance their nutty, rich flavor profile.
  • Use high-quality chocolate chips for more intense, luxurious chocolate taste in every bite.
