Description

Homemade apple donut mini muffins combine classic breakfast comfort with delightful seasonal flavors. Cinnamon-spiced batter and fresh apple chunks create irresistible miniature treats perfect for morning enjoyment or afternoon snacking.

Ingredients

Scale

Main Ingredients:

  • 1 1/2 cups (180 g) all-purpose flour
  • 1/2 cup (99 g) granulated white sugar
  • 1/2 cup (6070 g) grated apple (Gala recommended)
  • 1 large egg

Leavening and Spices:

  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Wet Ingredients and Coating:

  • 1/3 cup (76 g) unsalted butter, cubed and at room temperature
  • 1/4 cup milk (2% preferred)
  • 1/2 cup (113 g) unsalted butter, melted
  • 1/4 cup (50 g) granulated white sugar
  • 1 tablespoon cinnamon

Instructions

  1. Prepare the oven by heating to 375F (190C) and lightly coating a mini muffin pan with non-stick spray.
  2. Blend dry ingredients in a large mixing bowl, whisking flour, sugar, baking powder, salt, cinnamon, and nutmeg until evenly distributed.
  3. Incorporate cold butter into the dry mixture using a pastry cutter, working until the texture resembles coarse crumbs.
  4. Create a separate mixture by whisking egg, milk, and grated apple until thoroughly combined.
  5. Gently fold wet ingredients into dry ingredients, stirring until just mixed to prevent overmixing.
  6. Distribute batter evenly into muffin wells, filling approximately two-thirds of each cavity using a cookie scoop.
  7. Bake for 10-12 minutes until muffins develop a light golden color and a toothpick inserted comes out clean.
  8. Prepare coating by melting butter in a microwave-safe bowl and mixing granulated sugar with cinnamon in a separate container.
  9. After muffins cool slightly, dunk each one in melted butter, then roll completely in cinnamon-sugar mixture to create a sweet exterior.
  10. Allow coated muffins to cool entirely on a wire rack before serving, ensuring a crisp and delightful texture.

Notes

  • Grate apples just before mixing to prevent browning and maintain fresh flavor.
  • Use room temperature ingredients for smoother batter consistency and even baking.
  • Swap all-purpose flour with gluten-free blend for celiac-friendly version.
  • Reduce sugar content by using alternative sweeteners like stevia or honey for low-sugar diet.
