Ingredients
Scale
Meat and Protein:
- 1.5 pounds (680 grams) extra-lean ground beef
- 12 ounces (340 grams) raw bacon, chopped and divided
- 1 egg
Vegetables and Aromatics:
- 1 small white onion, finely chopped
- 5 button mushrooms, chopped
Binding and Flavor Ingredients:
- 1/4 cup (60 milliliters) evaporated milk
- 1/2 cup (120 milliliters) cornflake crumbs
- 6 ounces (170 grams) Swiss cheese, shredded and divided
Instructions
- Preheat the oven to 350°F (175°C), preparing a meatloaf pan or foil-lined baking sheet for the loaf.
- Crisp the bacon in a skillet over medium heat until lightly browned. Transfer to a paper towel, reserving 1 tablespoon for topping and keeping 1 tablespoon of bacon grease in the pan.
- Sauté onions and mushrooms in the reserved bacon grease until tender and mushrooms release their moisture, approximately 5-7 minutes. Allow to cool slightly.
- Combine ground beef, egg, and evaporated milk in a large mixing bowl. Gently incorporate the sautéed vegetables, most of the Swiss cheese, and cooked bacon.
- Fold cornflake crumbs into the meat mixture until evenly distributed. Form the mixture into a compact loaf shape in the prepared pan.
- Roast in the preheated oven for 1 hour, then carefully drain any accumulated fat.
- Sprinkle remaining Swiss cheese and reserved bacon bits over the meatloaf. Return to the oven for an additional 5 minutes until cheese melts completely.
- Let the meatloaf rest for 10 minutes to stabilize its structure. Slice and serve warm, ensuring each portion includes the cheesy, crispy topping.
Notes
- Choose high-quality thick-cut bacon for maximum flavor and better texture when mixed into the meatloaf.
- Sauté mushrooms thoroughly to release excess liquid, preventing a soggy meatloaf texture.
- Swap Swiss cheese with sharp cheddar or smoked gouda for a different flavor profile.
- Replace cornflake crumbs with almond flour or crushed pork rinds to make the recipe keto-friendly.
