Description

Irresistible caramel fudge crunch bars deliver a symphony of sweet and salty textures that dance across your palate. Rich layers of creamy caramel and buttery crunch promise a delightful escape into pure dessert bliss.

Ingredients

Scale

Main Ingredients:

  • 650 grams (23 ounces) milk or dark chocolate
  • 100 grams (3.5 ounces) white chocolate, broken into chunks
  • 100 grams (3.5 ounces) light brown sugar
  • 12 ounces (200 grams) condensed milk

Binding/Texture Ingredients:

  • 75 grams (2.6 ounces) Rice Krispies cereal
  • 112 tablespoons golden syrup or honey

Finishing Ingredients:

  • 60 grams (2.1 ounces) butter (salted or unsalted)

Instructions

  1. Prepare a 20x20cm baking tin by lining it with parchment paper, allowing excess paper to hang over edges for easy removal.
  2. In a medium saucepan, combine condensed milk, brown sugar, butter, and golden syrup over medium heat.
  3. Stir the mixture continuously until sugar dissolves completely, then simmer for 5-7 minutes, stirring occasionally until the caramel thickens and becomes smooth.
  4. Remove from heat and fold in white chocolate chunks, stirring until completely melted and integrated into the caramel mixture.
  5. Melt milk or dark chocolate using a double boiler or microwave method, stirring between 30-second intervals until smooth and fully liquefied.
  6. Mix approximately half of the melted chocolate with Rice Krispies, ensuring every cereal piece is thoroughly coated.
  7. Spread the chocolate-coated Rice Krispies evenly across the prepared tin, pressing down gently to create a compact base layer.
  8. Carefully pour the caramel fudge over the Rice Krispies base, using a spatula to distribute evenly and reach all corners.
  9. Top the caramel layer with remaining melted chocolate, tilting the tin to ensure complete and uniform coverage.
  10. Refrigerate for 2 hours or until the bars are completely firm and set.
  11. Extract the slab from the tin using parchment paper overhang, transfer to a cutting board, and slice into desired square sizes.
  12. Serve at room temperature for a softer texture or chilled for a firmer consistency, complemented by coffee, tea, or milk.

Notes

  • Caramel Precision Use a heavy-bottomed saucepan to prevent burning and ensure even heat distribution when cooking the caramel mixture.
  • Chocolate Melting Technique Avoid overheating chocolate by melting it slowly and stirring frequently to maintain a smooth, glossy texture without seizing.
  • Gluten-Free Adaptation Swap regular Rice Krispies with gluten-free rice cereal to make the bars suitable for those with gluten sensitivities.
  • Storage Hack Store bars in an airtight container between parchment paper layers to prevent sticking and maintain their crisp texture for up to 5 days in the refrigerator.
