Ingredients

Scale

  • 2 lbs (0.9 kg) ground beef
  • 1 (15-ounce/425 grams) can black-eyed peas, drained and rinsed

Vegetables:

  • 1 medium yellow onion, diced
  • 3 stalks celery, diced
  • 4 medium Yukon gold potatoes, cut into 1-inch pieces (approximately 1 lb/0.45 kg)
  • 4 carrots, peeled and sliced into rounds
  • 1 (14.5-ounce/411 grams) can green beans, drained
  • 1 (14.5-ounce/411 grams) can diced tomatoes with juices
  • 1 (15-ounce/425 grams) can corn, drained

Seasonings and Liquids:

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 46 cups beef broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 2 teaspoons chili powder
  • Salt, pepper, and red pepper flakes to taste

Instructions

  1. In a large Dutch oven, warm olive oil over medium-high heat and sauté chopped onions and celery for 2-3 minutes until softened and translucent.
  2. Add minced garlic and cook for an additional 1-2 minutes until aromatic, releasing its fragrant essence.
  3. Introduce ground beef to the pot, breaking it into small crumbles and cooking thoroughly until no pink remains, ensuring complete browning.
  4. Pour in diced tomatoes with their juices, tomato paste, black-eyed peas, corn, green beans, and diced potatoes and carrots.
  5. Sprinkle in selected spices to enhance the soup’s robust flavor profile.
  6. Gradually pour beef broth into the mixture, stirring to combine all ingredients evenly and create a harmonious base.
  7. Increase heat to bring the soup to a rolling boil, then immediately reduce to medium-low temperature.
  8. Cover the pot and allow the soup to simmer for 14-16 minutes, or until potatoes reach a tender consistency.
  9. Taste and adjust seasoning with salt, black pepper, and red pepper flakes to personal preference.
  10. Ladle the steaming soup into serving bowls, garnishing with optional toppings like shredded cheese or crispy tortilla chips.
  11. Serve immediately while piping hot, enjoying the hearty and comforting cowboy-style soup.

Notes

  • Choose leaner ground beef like 90/10 or turkey for a healthier protein option that reduces overall fat content.
  • Swap beef broth with vegetable broth to create a vegetarian version of this hearty soup.
  • Customize the heat level by adjusting red pepper flakes, allowing each person to control their spice preference.
  • Prep vegetables in advance and store in refrigerator to speed up cooking process and make meal preparation more efficient.
