Description

Comforting lasagna soup delivers classic Italian flavors in a hearty bowl of pure deliciousness. Melted cheese, tender noodles, and rich marinara create a soul-warming meal you’ll crave again and again.

Ingredients

Scale

Main Ingredients:

  • 1 lb ground beef
  • 8 oz bowtie pasta (uncooked)
  • 15 oz can diced tomatoes
  • 15 oz can tomato sauce
  • 4 cups chicken broth

Aromatic Ingredients:

  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt
  • Black pepper, to taste

Additional Ingredients:

  • 12 tablespoons olive oil
  • 3 oz (1/4 cup) tomato paste
  • 12 cups water (as needed)

Toppings:

  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large soup pot, warm olive oil over medium heat. Sizzle ground beef, diced onion, and minced garlic until beef turns golden brown and onions become translucent, approximately 5-7 minutes.
  2. Pour diced tomatoes with juice, tomato sauce, tomato paste, chicken broth, Italian seasoning, sea salt, and black pepper into the pot. Stir thoroughly to combine all ingredients.
  3. Increase heat and bring the liquid mixture to a rolling boil. Add uncooked bowtie pasta, then immediately reduce heat to low, creating a gentle simmer.
  4. Allow soup to simmer uncovered for 12-14 minutes, occasionally stirring to prevent pasta from sticking. Ensure pasta reaches al dente texture and is fully cooked through.
  5. Remove pot from heat. Ladle soup into serving bowls, creating individual portions with equal pasta and broth distribution.
  6. Garnish each bowl with a generous spoonful of ricotta cheese, sprinkle shredded mozzarella, and dust with grated Parmesan. Finish with fresh chopped parsley for added color and flavor.

Notes

  • Customize Pasta Swap bowtie pasta with gluten-free options like rice or chickpea pasta for those with dietary restrictions.
  • Veggie Swap Replace ground beef with plant-based crumbles or lentils to create a vegetarian version of this hearty soup.
  • Cheese Flexibility Use low-fat or dairy-free cheese alternatives to make the recipe more diet-friendly and accommodate different nutritional needs.
  • Spice Control Adjust Italian seasoning and black pepper amounts to suit personal taste preferences, making the soup milder or more robust as desired.
