Ingredients

Scale

Main Ingredients:

  • 3 to 3 1/2 cups flour
  • 1/2 cup pumpkin puree
  • 1/4 cup pumpkin puree (Filling)
  • 1 package active dry yeast

Liquid and Sweet Ingredients:

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup milk
  • 1/4 cup warm water
  • 1 egg
  • 3 tablespoons butter, melted (Filling)
  • 1 teaspoon vanilla (Filling)
  • 1/4 cup butter (Icing)
  • 4 ounces cream cheese (Icing)
  • 2 cups powdered sugar (Icing)
  • 1 1/2 teaspoons milk (Icing)

Spices and Seasonings:

  • 1/2 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon pumpkin pie spice (Filling)
  • 1 teaspoon cinnamon (Filling)

Instructions

  1. Dissolve yeast in warm water, allowing 10 minutes for activation until foamy bubbles emerge.
  2. Combine yeast mixture with milk, pumpkin puree, sugars, spices, salt, and egg in a stand mixer. Gradually incorporate flour and knead until dough becomes smooth and elastic.
  3. Transfer dough to a greased bowl, cover with a towel, and let rise in a warm environment for 1-1.5 hours until volume doubles.
  4. Gently deflate dough on a floured surface and roll into a rectangular shape approximately 1/4 inch thick.
  5. Create filling by blending melted butter, pumpkin puree, cinnamon, vanilla, and pumpkin pie spice. Spread evenly across rolled dough, then sprinkle with additional brown sugar and cinnamon.
  6. Tightly roll dough from the short edge into a compact log. Slice into uniform rolls using dental floss or a sharp knife.
  7. Arrange rolls in a greased baking dish, cover, and allow second rise for 30-45 minutes until nearly doubled.
  8. Preheat oven to 375°F. Bake rolls for 20-25 minutes until golden brown and center rolls are fully cooked.
  9. Whip icing ingredients until smooth and creamy, creating a light and fluffy texture.
  10. Generously drizzle warm icing over freshly baked rolls immediately after removing from oven. Serve while warm for optimal flavor and texture.

Notes

  • Choose warm water around 110°F to perfectly activate yeast without killing it.
  • Knead dough thoroughly to develop gluten, ensuring soft and fluffy rolls.
  • Use room temperature ingredients for better ingredient incorporation and consistent texture.
  • Allow sufficient rising time in a draft-free, warm area to help dough expand properly.
  • For gluten-free version, substitute all-purpose flour with a 1:1 gluten-free baking blend.
  • Substitute dairy milk with almond or oat milk for a vegan adaptation.
  • Refrigerate rolls overnight after second rise for convenient morning baking.
  • Store leftover rolls in an airtight container at room temperature for 2-3 days.
  • Freeze unbaked rolls for up to one month, thawing and baking when needed.
