Ingredients
Scale
Chicken & Base:
- 1 large boneless skinless chicken breast (about 454 grams / 1 pound)
- 2–3 tablespoons olive oil
- 3 teaspoons Italian seasoning
- 1 tablespoon salted butter
- 3 cloves garlic, minced
Sauce Ingredients:
- 1/4 cup dry white wine
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 pinch red pepper flakes (optional)
- 2 cups chicken broth
- 1 1/4 cups half and half
Pasta & Mix-ins:
- 1/2 pound pasta (any kind)
- 1/3 cup sundried tomatoes, drained and chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup grated Romano cheese
- 2 cups spinach
Instructions
- Prepare chicken by slicing into thin, uniform pieces and patting dry with paper towels. Generously coat with Italian seasoning, salt, and black pepper.
- Heat oil in a skillet over medium-high heat. Sear chicken for 4-5 minutes on each side until golden brown and crispy. Allow chicken to rest for 5 minutes, then slice into bite-sized chunks.
- In the same skillet, melt butter and sauté minced garlic until fragrant. Pour in white wine, tomato paste, dried oregano, and red pepper flakes. Simmer and reduce liquid by approximately half.
- Pour chicken broth and half and half into the skillet. Add sundried tomatoes and introduce pasta directly into the simmering sauce. Cook until pasta reaches al dente consistency, stirring occasionally.
- Lower heat and gradually incorporate parmesan and cream cheese, stirring continuously to create a smooth, creamy texture. Fold in cooked chicken pieces and fresh spinach, heating until spinach wilts and everything is evenly combined.
Notes
- Slice chicken uniformly to ensure even cooking and consistent bite sizes.
- Pat chicken dry before seasoning to help achieve a perfect golden-brown sear and lock in flavors.
- Use high-quality Italian seasoning blend for authentic Tuscan taste profile.
- Season chicken generously but not excessively to maintain balanced flavor.
- Sear chicken at medium-high heat to develop beautiful caramelization without burning.
- Let chicken rest after cooking to retain moisture and prevent dryness.
- Choose fresh garlic for more robust and vibrant sauce flavor.
- Select dry white wine like Pinot Grigio for delicate sauce complexity.
- Use sundried tomatoes packed in oil for richer, more concentrated taste.
- Add spinach last to preserve its bright color and prevent wilting.
- Gradually incorporate cheeses to create smooth, creamy sauce texture.
