Description

Sumptuous Tuscan chicken pasta brings Italian countryside flavors right to your dinner table. Creamy sauce, tender chicken, and sun-dried tomatoes create a delightful meal you’ll savor with each comforting bite.

Ingredients

Scale

Chicken & Base:

  • 1 large boneless skinless chicken breast (about 454 grams / 1 pound)
  • 23 tablespoons olive oil
  • 3 teaspoons Italian seasoning
  • 1 tablespoon salted butter
  • 3 cloves garlic, minced

Sauce Ingredients:

  • 1/4 cup dry white wine
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 pinch red pepper flakes (optional)
  • 2 cups chicken broth
  • 1 1/4 cups half and half

Pasta & Mix-ins:

  • 1/2 pound pasta (any kind)
  • 1/3 cup sundried tomatoes, drained and chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup grated Romano cheese
  • 2 cups spinach

Instructions

  1. Prepare chicken by slicing into thin, uniform pieces and patting dry with paper towels. Generously coat with Italian seasoning, salt, and black pepper.
  2. Heat oil in a skillet over medium-high heat. Sear chicken for 4-5 minutes on each side until golden brown and crispy. Allow chicken to rest for 5 minutes, then slice into bite-sized chunks.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Pour in white wine, tomato paste, dried oregano, and red pepper flakes. Simmer and reduce liquid by approximately half.
  4. Pour chicken broth and half and half into the skillet. Add sundried tomatoes and introduce pasta directly into the simmering sauce. Cook until pasta reaches al dente consistency, stirring occasionally.
  5. Lower heat and gradually incorporate parmesan and cream cheese, stirring continuously to create a smooth, creamy texture. Fold in cooked chicken pieces and fresh spinach, heating until spinach wilts and everything is evenly combined.

Notes

  • Slice chicken uniformly to ensure even cooking and consistent bite sizes.
  • Pat chicken dry before seasoning to help achieve a perfect golden-brown sear and lock in flavors.
  • Use high-quality Italian seasoning blend for authentic Tuscan taste profile.
  • Season chicken generously but not excessively to maintain balanced flavor.
  • Sear chicken at medium-high heat to develop beautiful caramelization without burning.
  • Let chicken rest after cooking to retain moisture and prevent dryness.
  • Choose fresh garlic for more robust and vibrant sauce flavor.
  • Select dry white wine like Pinot Grigio for delicate sauce complexity.
  • Use sundried tomatoes packed in oil for richer, more concentrated taste.
  • Add spinach last to preserve its bright color and prevent wilting.
  • Gradually incorporate cheeses to create smooth, creamy sauce texture.
