Description

Creamy Cajun Pasta delivers spicy southern comfort without animal products, bringing zesty New Orleans flavors to plant-based plates. Bold seasonings and rich cashew sauce create a memorable meal you’ll crave again and again.

Ingredients

Scale

Main Ingredients:

  • 1 pound pasta of choice
  • 1 can (14.5 ounces) fire roasted diced tomatoes
  • 3 cups vegan chicken or vegetable broth

Vegetables:

  • 1 small onion, quartered and sliced
  • 23 medium bell peppers, quartered and sliced
  • 46 green onions, sliced

Seasonings and Cream:

  • 13 teaspoons Cajun seasoning
  • 1/23/4 cup coconut milk or cashew cream
  • Optional vegan protein of choice

Instructions

  1. Warm a spacious cooking vessel over medium heat, introducing thinly sliced onions and allowing them to become translucent and fragrant, approximately 3-4 minutes.
  2. Incorporate colorful bell peppers and sprinkle half the Cajun seasoning, sautéing until slightly softened. Introduce diced tomatoes and continue cooking for an additional 2 minutes.
  3. Pour uncooked pasta and vegetable broth into the pot, ensuring ingredients are well combined. Cover and simmer on medium heat for 6-10 minutes, periodically stirring to prevent sticking and ensuring even cooking. Add extra liquid if the mixture appears dry.
  4. Remove from heat and fold in remaining Cajun seasoning, freshly chopped green onions, and velvety plant-based cream. Taste and adjust seasonings to personal preference. Gently mix until sauce reaches a luxurious, creamy consistency.
  5. Transfer to serving dishes, garnishing with additional green onions if desired. Serve immediately while pasta remains hot and sauce is silky smooth.

Notes

  • Use a wide, deep skillet to ensure even cooking and proper vegetable sautéing.
  • Chop vegetables uniformly for consistent texture and cooking time.
  • Customize Cajun spice level by adjusting seasoning amount to personal heat preference.
  • Replace traditional pasta with gluten-free or zucchini noodles for alternative dietary needs.
